The absolute best breakfast burritos in town. They only accept cash so come prepared. The flour tortillas are about as authentic as they get and are about 10" in diameter and are stuffed full. The green sauce is mild and pretty good but their red sauce is where they shine. A little goes a long way so don't overdue it unless you really like the heat. They're not the quickest but it's worth the wait. People who call ahead typically only wait about 3-5 min. Overall, can't recommend this place enough. Hours during the week are hit and miss, easy way to know if they're open is to look and see if the white door on the right side of the building is open. If it's not then they're closed. I say this because their open/closed sign is hard to see from the street.
Pablo's is hands down the best burrito stand in Waco. The tortillas are made fresh and the burritos are made to order. The line can get crazy on the weekends, so call in ahead if possible. They also only take cash, so be prepared before you go. My favorite is the combo burrito and a go-to bacon/egg/potato/cheese. The guisada is also fresh and melts in your mouth.

It's carry out only, and there is very little parking. My favorite is the beef and potato burritos, and my husband likes the fajitas and guisada. This is a delicious go-to meal when you want a fast, delicious, homemade breakfast or lunch.
I smell them every time I'm across the street working. Today I decided to try them. Best breakfast burrito I've had! And you get a HUGE portion for a small price! I will definitely be back for more ^__^
